Monday Catch Up. Jack’s EKG, Home Updates, Homemade Peach Cobbler

Hope you had an amazing weekend! I always look forward to the weekend because Sunday, Sunday my friends is the one day of the week that Erick doesn’t work at the house. So they are the best day of the week around here. The kids are glued to him all day and I love being able to actually spend time with him.

  • We are on track to get our 4-way inspection this coming Friday. Yay! Which means insulation and sheetrock are insight.
  • Erick’s current project is running all the wires to doors and windows for our security system
  • We finalized kitchen cabinet layout, but I am still majorly struggling to committing to a cabinet color. Part of me REALLY wants to go light wood. The other part of me is fighting for a really pretty beige grey. These two pictures below are such perfection in my eyes which is why I am so torn! What’s your opinion?

  • On Thursday we received Jack’s EKG results. I didn’t share immediately because I honestly just needed a few days to process the results. Which were, that his EKG came back as abnormal. Which obviously wasn’t what we were hoping for. He has what is called a RSR Prime Pattern in Zone 1. Which in not medical terms means that a small portion of his heart may be not beating the same time as the rest of his heart. At this point we still don’t know a lot, but has an appointment in a few weeks with a cardiologist at Primary Children’s Hospital. I think I was in shock when I first had the news, but I am doing much better now. I know that it is nothing urgent since it’s ok that his appointment isn’t for almost a month. And I still know and feel that everything is going to work out perfectly fine. I have had a lot of peace of mind the last few days, thanks to relying on God and family.
  • I am a loafer girl through and through and am dying to snatch up these ones, and these.
  • This weekend my dad ended up giving me a ton of peaches from my grandma’s yard. So! I decided to make peach cobbler. I have never made up a recipe until now. But holy. It was delicious! So good that it was gone in less than 24 hours and I had to make a second batch. I will share the recipe below if you are interested.

Peach Cobbler: Ingredients

5 Peaches
1 Cup Sugar
1 Cup Flour
2 1/2 Tsp Baking Powder
Cinnamon
1 13.5 Ounce Can Coconut Milk
6 Tbsp Butter

Directions:

Preheat oven to 350 Degrees. Once stove is hot cut up butter into 9×13 pan and put it into the oven to melt. 
Mix all dry ingredients. Cinnamon use aggressively, ha. I didn’t measure this! But I just shook it over the whole mixture. Once all dry ingredients are mixed add in the can of coconut milk. Spread the batter over the melted butter in your pan and finish with evenly dispersing all your cut up peaches over top. 
Cook for about 45 minutes. The top should all look golden brown. Eat it with frozen yogurt or ice cream, or don’t. We didn’t have any this weekend and it was still sooooo yummy.

  • I don’t see the loafers, but I wanna? Lol. The recipe looks amazing, think I could use sweetened condensed milk? Or regular milk? Also, what about using some of my canned peaches from last year?

    • Hey! Sorry you couldn’t see the link to the loafers! It is right where it says “these ones” and “these. They are both clickable! But I will throw the links up in my stories tonight if that’s easier! As far as the recipe goes- I think you could definitely use sweetened condensed milk. That sounds to die for! Ha. With that said it will be a lot sweeter, so I would maybe cut the sugar down to 1/2 cup instead a full cup. I think regular milk would also work! But it isn’t as thick as canned coconut milk so I’d start with only 1/2 cup of milk and go from there. It should have a pretty regular cake batter consistency 🙂
      And canned peaches would definitely work! If you try it out let me know!

  • I love the Monday catch-up idea! I have been thinking of you and your family, and waiting to hear Jack’s results! My heart goes out to you as a mother. Hearing abnormal results was not an easy thing to process, I’m sure. Whatever you do, Dr. Google is never your friend. I am sending you and Jack all of the good vibes as you await further information!

    • So glad you like the idea! And thank you, that means more to me than you know. Really though, thank you, thank you. I agree Google is not my friend at this point. Haha. Just waiting tight with positive attitude until I am given more reason to think otherwise 🙂
